Executive Chef Derek Smith’s culinary passion began by baking cakes and pastries with his 'mum' at 10 years old. By age 15, he was working in a kitchen and entering into a formal apprenticeship program in his native Australia. In his 20 years as a chef, Derek has worked in many hotels, restaurants, private clubs, and catering facilities, including Australia's largest private club in Melbourne and the prestigious Cherokee Town and Country Club in Atlanta.
